Sadly, the rest of our beloved snow has melted, but baby, it's still cold outside, and after Friday, my husband will be home from work for two whole weeks for #ChristmasVacation! I don't know about you, but when I think of •my• husband being home for an extended period, (when he routinely works upwards of or close to 50 hours a week), something in me lights up like the star on top of a #Christmas tree...or, well, something like that. You get it...it's the #seasonal yada yada in me. I'm also inspired to dig deep into that #cooking feeling, you know, the one that was admittedly more present before having #oneunderone, when it was nothing to spend hours #inthekitchen, pouring every ounce of my soul into whatever dish I so chose; it was nice; I miss those days.
Now though, it's butt changes, belly rubs, tickle fights, raspberries, and boobies galore, (I honestly couldn't tell you the last time I wore a shirt the whole time I was awake). Thankfully though, a little something exists called the #slowcooker, and it lets me get away with SO MUCH, you just wouldn't believe. Or, at least that's what I tell myself, anyway. I wouldn't change #mylife or this sweet little #partyofthree for anything, and this ranch chicken chili ain't too shabby, neither. So yeah some things may change, but my love for #goodfood never will, and thankfully, even on nights like tonight, nothing is sacrificed, including that flavor that tastes like I watched dinner ready all day.
I am SO excited to be the owner of an 8-quart Instant Pot!!! ❤️ I have been searching for good deals & on Facebook Marketplace for some time. I scored this baby for $50!!it has a large dent in the front. But was never used or plugged in before! I feel like I got a great deal!

How do I enjoy my favorite flavors in a healthy way? I find a way to #reinvent them!
I thoroughly enjoy a burger with blue cheese crumbles and sautéed onions... MMMmmm! But the bun is too much flour and sugar and ordering this at a restaurant means I have no clue how much sodium there is in the seasoning! Instead I’ve created a way at home to add more veggies, less carbs, and be in total control of my sodium content!
This is my blue cheese burger zoodles:
1) heat skillet to medium and add 1 Tbs olive oil
2) add minced garlic and sauté until fragrant
3) add sliced onion and sautéed partially, then add spiralized #zucchini and cook until tender crisp
4) cook burger separately, add to dish and sprinkle with blue cheese

This head of #cauliflower has been staring at me from inside the crisper for weeks. My family doesn't like cauliflower. I hardly like cauliflower, BUT, I see it and buy it thinking, oh, it's heathy and verstile, and every time it sits and sits, cause I don't really LIKE it. Ugh. So today I did something about that head giving me the stink eye every time I open the *repaired* fridge.
Room temp 4 T butter+ 1 clove garlic grated on microplane+ dried oregano+ salt+ pepper (to taste)
Cauliflower chopped or sliced into mini-steaks
Red pepper flakes
Melt butter and coat cauliflower. Arrange on baking sheet. Sprinkle with red pepper. Roast for 20 minutes or however long it takes to get some good color on the cauliflower.
Delicious AND hardly tastes like cauliflower 😉 as Peg + Cat say... 🎶Problem solved! 🎶
